Easy, healthy breakfast recipe

One of the more common problems most people have is coming up with interesting ideas for breakfast.

Eggs are so versatile and such a solid source of protein, that they are the easy go to option. But if you just cook them the same 2 or 3 ways every time, it can get a bit boring. And getting additional nutrients, through veggies mostly, inevitably leads to an omelette.

I saw a picture of something on instagram and decided to throw some ingredients together as a guess at what was included.

Not only was it incredibly simple, it tasted amazing!

Ingredients:

I’m not going to give quantities because I’ve been changing them each time I make it. If you are working to specific macros then clearly you should measure, but other than not going overboard with the feta cheese, this is simply a simple way of including a variety of veggies in your breakfast, keeping it nutritious and healthy as well as giving you something to look forward to in the morning.

  • Whole Eggs (& Egg Whites as needed to keep fat levels low and protein high)
  • Red & Yellow Bell Peppers
  • Cherry Tomatoes
  • Very Lazy Garlic
  • Mustard Powder
  • Fresh Thyme
  • Dry Parsley
  • Feta Cheese
  • Sea Salt
  • Ground Black Pepper
Chopped veg first, then add the eggs, then the feta, and finally the spices

Personally I use an electric chopper rather than hand chopping as it’s easier to evenly mix in the garlic and mustard, but you can easily finely chop the veggies by hand.

Pre-heat the oven to 220 degrees C

Add all the ingredients except the eggs and the feta to the electric chopper and mix until finely chopped.

Line the bottom of a baking dish with the mix.

Add the eggs and egg whites as desired (I’ve shown 4 eggs, but generally use 3 whole eggs and 2 egg whites)

Add some cubes of feta cheese.

Bake in oven for 15-20 mins (for a fan assisted oven stay on the side of 15mins)

Remove from oven and enjoy.

Easy to mix things up

Obviously you can vary this a great deal, mix in different vegetables (though I’d suggest keeping the tomatoes in there as they seem to add a lot to the taste, as does the mustard).

Give it a go, vary it up to see if you can find new flavours that light up your taste buds.

The great thing about this dish it it takes minutes to prepare and the time in the oven allows time to go get ready for the day before sitting down to eat.

As mentioned, eggs are an extremely versatile option for creating healthy food choices and keeping things interesting.

And whilst not every option out there is ultra healthy, as I did with this option, it’s easy enough to take the concept of an idea and simply include the healthy ingredients.

What if this simple recipe is still too difficult?

If you can’t handle this level of cooking, you might just struggle to keep to a healthy eating plan. 

That doesn’t mean you should give up. 

Rather, employ your time in areas you are more productive or put more effort into getting your training correct. Then look at methods to simplify your nutrition

This recipe is not 100% Dynamic Cleanse & Sustenance friendly. But, the only change required to make it work is to remove the Feta Cheese (and you could replace it with another ingredient from the pantry list) plus you would need to add in something like spinach or kale to get the variety. I have done this with spinach and it worked very nicely.
